Polka-Dotted Pie eyes early-spring Merrill debut

According to Jen Schlaefer, co-owner of Polka-Dotted Pie, if all goes according to plan the business will be looking at an early spring debut for their new location at 914 East Main Street, Merrill.
Officially opening in Sept. of 2015, Schlaefer and co-owner Wendy Woller have been running their full-service bakery, Polka-Dotted Pie, out of their licensed kitchen and home located in Wausau. According to Shlaefer the pair have been making their goodies at their home and bringing them to Craft and Vendor shows around the area, where they sell out fast.
“We have been very successful when we go out to craft and vendor shows and we usually sell all of our stuff pretty quick,” said Schlaefer. “We really wanted to build the business from the ground up and try to get some solid clientele before we moved forward with getting a store front.”
Woller piggy backed off of Schlaefer, stating it was the right time to invest in a store front.
“We have been going to farmers markets for four years now,” added Woller. “Our clients have expressed that they would really enjoy being able to see us on a daily basis, so we decided it was time to get bigger and invest in a store front.”
According to Schlaefer, Polka-Dotted Pie is more than just a pie shop, offering many of peoples favorite baked goods.
“We are a full-service bakery,” said Schlaefer. “We offer sweet rolls, muffins, scones, cakes, cookies, we cater weddings, we eventually want to offer deep fried doughnuts and obviously pies.”
“Overall business has been great,” added Schlaefer. “We continue to grow each year and the way that this town has supported us is exciting. We constantly get people messaging us asking when we are going to open and saying they can’t wait to try some of our stuff, it’s been really awesome. We’re very excited to get this location open.”
